VINIFICATION

Grapes are destemmed and undergo spontaneous fermentation in stainless steel. A gentle 3-week maceration follows to extract colour and fine tannins.
Aging: 10 months in French oak barrels (0% new oak). No fining or filtration prior to bottling.
