Pommard AOC 2022

An elegant and structured Pinot Noir from the famed village of Pommard, crafted by Domaine Jessiaume, a historic Santenay estate founded in 1850 and certified organic since 2016. The La Combotte climat sits high on the slopes of Pommard, delivering wines of intensity, freshness, and refined power.

VINIFICATION

After meticulous sorting, grapes are destemmed and placed directly into vats. A 5-day cold pre-fermentation maceration precedes spontaneous fermentation. Total vatting lasts 3 weeks, followed by 12 months aging in French oak barrels (25% new). No fining.
