TECHNICAL FEATURES

Soil type: Hilly, calcareous clay loam with moderate rocky content

Harvest period: Mid-September, manual harvest and bunch sorting

Vinification: Fermentation and maceration in stainless steel tanks for 12 days at controlled temperature (23–26 °C), followed by malolactic fermentation with indigenous lactic bacteria
Maturation: 8 months in steel tanks, with a small proportion aged in French oak tonneaux
Bottle aging: Minimum 10 months at stable temperature (18 °C)

Colour: Deep ruby with lively, bright reflections
Aroma: Complex notes of plum, blackberry, and cherry, interwoven with Mediterranean herbs and gentle spice
Palate: Intense and vibrant, with balanced tannins and a subtle savoury finish. Fresh yet full-bodied, with remarkable drinkability
Pairings: Perfect with Palermitan-style baked “anelletti” pasta or a juicy tuna steak
Serving temperature: 16 °C
