2016 Napa Valley Cabernet Sauvignon

Blend : 78.9 % Cabernet Sauvignon, 15% Merlot, 3.5 % Cabernet Fran, 2.3 % Petit Verdot, 0.3% Malbec

Winemaking + ageing process : After harvest, individual vineyard plots are fermented separately allowing blends to be based on the inherent qualities of their vineyard components before oak influence, In early 2017 those barrels were blended and transferred to 84 % new American oak barrels from Silver Oaks cooperage, where it matured for 24 months. This time on barrel adds tannic structure and layers of bay leaf, coconut and vanilla to the finished wine.
The 2016 vintage was exceptional despite it being the fifth consecutive year of drought in the Napa Valley. Weather conditions were ideal from spring through summer. Mild temperatures during ripening resulted in plentiful fruit.

Tasting notes : This wine is deep ruby in colour. The nose is opulent with notes of cassis, ripe raspberry, toasted coconut and shitake mushroom. The first sips are rich, that depth continues throughout the mid-palate and persists for an exceptionally long finish. The palate is structured without being heavy. Fresh cherry flavours balanced with floral notes and a subtle hint of black pepper add complexity. The plush tannins will lend to its ability to age.

Drinking now will bring focus on the vibrant fruit and depth this wine has to offer. With proper cellaring this wine will evolve beautifully through 2040.
