Winemaking + ageing process : The fruit is certified organic, certified BeeFriendly and HVE 3 sustainable viticulture. No synthetic treatments are used in the vineyard and the estate is managed in accordance with biodynamic principles. The Viognier vines are 18 years old, north facing at 550 m on very stony clay and limestone. Ripe fruit is hand harvested into shallow alimentary plastic crates to protect the integrity of the fruit. Grapes are hand sorted twice on separate tables, de-stemmed and fermented in temperature controlled stainless steel tanks. The wine is then transferred to concrete tanks using the flow of gravity before it’s 8 months in tight grain, low-toast demi-muids. 

Tasting notes : A fragrant bright and clear white wine with golden tints. The texture and freshness are remarquable. The profile of this wine is a combination of a Southern Rhone, with its rich and ripe fruit and Northern style freshness from the altitude. Very aromatic on the nose with notes of almond, dried apricot, honey and brioche. The palate is full bodied, elegant, creamy. The time spent in Oak and on lees really shines, as well as the varietal and site characteristics.
