Héloïse AOC Vaucluse Chêne Bleu 2012

Blend : Syrah 65%, Grenache Noir 31%, Rousane 4% 

Winemaking + ageing process : The fruit is certified organic, certified BeeFriendly and HVE 3 sustainable viticulture. No synthetic treatments are used in the vineyard and the estate is managed in accordance with biodynamic principles. The Grenache Noir vines are over 40 years old, North-West facing at an altitude of 530 m. The Syrah vines are 30 years old, South-West facing at 540 m on stoney clay and limestone soil. Ripe fruit is hand harvested into shallow alimentary plastic crates to protect the integrity of the fruit. Grapes are hand sorted twice on separate tables, de-stemmed and fermented in temperature controlled stainless steel tanks. The wine is then transferred to concrete tanks using the flow of gravity and then transferred to French Oak for an ageing period of 18 months. 

Tasting notes : Deep garnet red. Rich nose with hints of coffee, dark red fruit, blackberry, truffle, mocha and fragrant hints of violet. Fleshy and full bodied on the palate, rich, fresh with fine tannins. Long finish with notes of black fruit and truffle.
